Fruit Cobbler

I served this dessert to Tim’s family last Thursday, and they loved it.  The idea is very simple: slice soft fruits into a glass casserole dish, heat in the microwave 3 1/2 minutes, top with granola, heat 1 minute, and serve under vanilla ice cream.  Super healthy, super tasty, super quick and easy.

Here’s the version I concocted based on what I had in the fridge:

In a 9×13 glass pan:
1 C blueberries
1 C blackberries
2 peaches, sliced
1 mango, sliced
2 cups homemade granola
vanilla ice cream
Time: ~5 minutes (depends on how many people are helping slice fruit)
Serves: 8-10

    My husband is very special. After looking at this post, he said his granola recipe is:

    1 cup of oats
    3 cups of M&M’s

    On second thought, you put the oats back in the cupboard.

    Don’t worry, he doesn’t make the granola around here!

      Sally, this made me laugh. Tell Andrew that his recipe sounds like something Tim would like…over ice cream probably better than over fruit cobbler!
