I served this dessert to Tim’s family last Thursday, and they loved it. The idea is very simple: slice soft fruits into a glass casserole dish, heat in the microwave 3 1/2 minutes, top with granola, heat 1 minute, and serve under vanilla ice cream. Super healthy, super tasty, super quick and easy.
Here’s the version I concocted based on what I had in the fridge:
In a 9×13 glass pan:
1 C blueberries
1 C blackberries
2 peaches, sliced
1 mango, sliced
2 cups homemade granola
vanilla ice cream
Time: ~5 minutes (depends on how many people are helping slice fruit)
